Instructions / Cách làm

  1. Brew strong coffee (5 min). Put the ground coffee and chicory in a drip filter, French press, or Vietnamese phin. Pour the hot water over it slowly and brew about 2 cups (480 ml) of dark coffee.
  2. Heat the milk (4 min). Warm the milk in a small saucepan over medium heat until it is steaming and small bubbles form at the edge. Do not let it boil.
  3. Combine. Pour equal parts hot coffee and hot milk into each cup, about ½ cup (120 ml) of each per 1-cup (240 ml) serving.
  4. Sweeten and serve. Stir in 1 tsp (4 g) of sugar per cup if you like. Serve right away with beignets.

Chicory gives New Orleans coffee a slightly bitter, chocolatey taste. A Vietnamese phin works well for the brewing step, so your student may already know the method.
